Taco Bowl Soup

Taco Bowl SOupThis Taco Bowl Soup is a weeknight winner. It’s quick and easy to make and packed full of that delicious taco flavour. It’s warm and comforting, familiar in flavour yet gives a new twist on the classic taco bowl. And it’s something just about any child will eat and enjoy. That all sounds like a perfect meal to me!

You can mix up the vegetables and toppers you use in the soup for variety too. Just about anything will work! For example, I shred red cabbage to add on top of the soup or sprinkle over fresh chilli for extra kick.

A tablespoon of American powdered Ranch seasoning stirred through the soup adds another layer of flavour, if you are lucky enough to have some in your pantry!

Taco Bowl Soup

Ingredients

300g lean beef mince
1/2 red onion, thinly sliced
1/2 red capsicum, diced
1 packet taco seasoning mix
1 cob of corn, cooked and kernels removed
1 tin chopped tomatoes
1 cup chicken stock
1 avocado, diced
1 carrot, grated
6-8 baby tomatoes, chopped
1 spring onion, sliced
A handful of coriander, coarsely chopped
Freshly squeezed lime juice
Cheese, corn chip and sour cream to serve – optional

Instructions

Cook the mince in a large saucepan over a high heat until almost cooked – about 5 minutes. Add the onion, capsicum and taco seasoning and mix well. Add in the corn, tinned tomatoes and enough chicken stock to make a thick soup. Cook for another 5 minutes to allow the flavour to develop and vegetables to cook through. Add more stock if required to get the desired consistency.

Divide the soup between two bowls. Top with grated carrot, diced tomato, spring onions, avocado and coriander along with a generous squeeze of lime juice.

Serve immediately with grated cheese, sour cream and corn chips as optional additions.

    Hi Annabel. I made this last weekend and it was delicious. Also made last week’s Ramen. Must have overdosed on the chili as that dish lit my eyes up. Still enjoyed both meals though. You must have a little helper in the kitchen as my preparation time seems to be taking twice as long as indicated. Look forward to each weeks new recipes. Your parents are experimenting on us Saturday night and guess what Sri Lankan is on the menu. Regards Gerry
