Lemon Raspberry Yoghurt Muffins

If you’ve looked around my blog before, you would know I’m a fan of the muffin. From savoury Ham Cheese & Zucchini Muffins to my vibrant Carrot, Apple & Oat Muffins there is a muffin for everyone. And now I have a new favourite –  my Lemon Raspberry Yoghurt Muffins. They are delightful!

These muffins are quick and easy to make and are light and tangy to eat. The ingredients are all basic cupboard and fridge items that I usually have on hand. So it is easy to make a batch when a baked treat is needed. And they are a firm favourite of all members of the family. I love that they are a relatively healthy snack too with no added sugar, relying on the maple syrup and berries for sweetness.

They are the perfect muffin in school lunchboxes or for a morning tea treat at home. They really are fantastic! You will find a batch never lasts all that long. I suspect these Lemon Raspberry Yoghurt Muffins will remain a firm favourite for quite some time to come!

A bowl of Lemon Raspberry Yoghurt Muffins

Ingredients

2 1/2 cup self raising flour
1-2 tablespoons chia seeds
3 tablespoon maple syrup
2 eggs
1 cup Greek yoghurt
1 ½ cups frozen raspberries
1 teaspoon vanilla
½ cup olive oil
Zest of 1 lemon
3-4 tablespoons lemon juice

Instructions

Preheat oven to 180 degrees. Line a muffin tin with paper cases – the mix makes around 18 muffins.

Combine the flour, chia seeds and lemon zest in a large bowl and stir to combine.

In another bowl mix together the eggs, yoghurt, maple syrup, lemon juice, vanilla and olive oil. Stir through the raspberries.

Add the wet ingredients to the dry ingredients and stir until just combined. Don’t over mix the batter – this leads to tough muffins.

Spoon the mixture in to the prepared muffin tray, dividing the mixture evenly. Bake in the oven for around 20-25 minutes, checking that they are cooked through.

Remove from the oven and allow to cool for about five minutes in the tray. Then remove and cool completely on a wire rack. Store in an airtight container in the fridge.

Muffins can be sprinkled with a little icing sugar once cool for extra indulgence if desired!
