Carrot Apple & Oat Mini Muffins

Our youngest daughter is going through a phase where she is refusing to eat anything that resembles a vegetable. It’s so frustrating! It doesn’t matter how they are presented, either cooked or raw, she is refusing to eat them. So I’m experimenting with hiding vegetables in all manner of things to help get her to eat them. Given mini muffins are one of her favourite things to eat, it made sense to see what I could come up with in that space to tempt her. These Carrot, Apple & Oat Mini Muffins are my first variety and they are a huge success! Not only does she like them but the family has demolished a batch in two days …

The secret to their success seems to be in the fact that she can’t see the vegetables. The carrot is steamed and pureed, the apple peeled and grated. So to my daughter, they look like any other mini muffin, only orange. And what three year old doesn’t like colourful food? And with the natural sweetness of the carrot, apple and maple syrup no additional sugar is needed. I love them! I think these Carrot, Apple & Oat Mini Muffins are a definite winner in my house!

Carrot Apple & Oat Mini Muffins

Ingredients

1/2 cup rolled oats
1 egg
1/2 cup Greek yoghurt
1 apple, peeled and grated
2 carrots, steamed and pureed (about ½ cup of puree)
1 tablespoon of maple syrup
1 tablespoon olive oil
Pinch of salt
1 cup self raising flour

Instructions

Preheat oven to 180 degrees. Line a mini muffin tin with paper cases – the mix makes around 24 muffins.

Combine all the ingredients except the flour in a bowl and mix well. Sift in the flour and stir to just combine. Be careful not to over mix the batter – this can lead to tough muffins.

Spoon the mixture in to the prepared muffin tray, dividing the mixture evenly. Bake in the oven for around 22-25 minutes, checking that they are cooked through.

Remove from the oven and allow to cool for about five minutes in the tray. Then remove and cool completely on a wire rack. Store in an airtight container in the fridge. The muffins can also be frozen.
