Apple Raspberry Mini Muffins

Yes it’s muffin time again! It seem the muffin love isn’t waning at all in my house with muffins the most popular snack request. This week’s flavour request was for Apple Raspberry Mini Muffins. Thankfully that was doable with the ingredients in the house and they are incredibly delicious!

As usual, they are relatively healthy for a kids snack. No refined sugar and plenty of added goodness with yoghurt, oats and chia seeds all hiding in there. Along with plenty of fruit too – banana, apple and raspberries are all in this batch. You don’t mind them having a couple of these Apple Raspberry Mini Muffins when they taste this good and are not too naughty!

Apple Raspberry Mini Muffins

Ingredients

2 cup self raising flour
1 cup rolled oats
1-2 tablespoons chia seeds
2 tablespoon maple syrup.
1 egg
1 cup Greek yoghurt
175g frozen raspberries
1 teaspoon vanilla
2 tablespoons olive oil
1 apple, grated

Instructions

Preheat oven to 180 degrees. Line a mini muffin tin with paper cases – the mix makes around 48 muffins.

Combine the flour, chia seeds and oats in a large bowl and stir to combine.

Add the frozen raspberries, egg, olive oil, yoghurt, maple syrup, vanilla and banana to a blender or food processor and blitz until smooth.

Add the wet ingredients to the dry ingredients along with the grated apple and stir until just combined. Don’t over mix the batter – this leads to tough muffins.

Spoon the mixture in to the prepared muffin tray, dividing the mixture evenly. Bake in the oven for around 25 minutes, checking that they are cooked through.

Remove from the oven and allow to cool for about five minutes in the tray. Then remove and cool completely on a wire rack. Store in an airtight container in the fridge. Alternatively, the muffins can be frozen for up to 3 months.
