Simple Lamb Rogan Josh

This Simple Lamb Rogan Josh is a fantastic easy curry. The flavours are amazing yet the cooking of it is ridiculously simple. It uses a store bought rogan josh curry powder as the base flavour. And the slow cooker allows the richness and texture to develop over the cooking process.

Now don’t get me wrong, I do love a more complex curry where you build the flavours from scratch. I have several recipes already on the blog if you have a look. But sometimes you need a helping hand. A simple midweek curry, that requires minimal effort but still tastes delicious. And that’s where a pre made curry powder really adds value. Just about every spice shop will sell the base powder and I love them. It allows you to create authentic flavours with not too much effort or ingredients. And using a powder over a paste allows you to keep the curry healthier as well. Winning!

I do love to make this simple lamb rogan josh the day before we are going to eat is, just to allow the flavours to develop even more. But whether you cook it the day before, slow cook it or cook it quickly on the stove and eat it immediately, you will not be disappointed in the dish!

Simple Lamb Rogan Josh

Ingredients

600g diced lamb (I use lamb rumps)
4 tablespoons Rogan Josh curry powder (available from any good spice shop)
1 brown onion, sliced
4 cloves of garlic, crushed
1 tablespoon grated ginger
1 tin chopped tomatoes
1/2 cup water

Instructions

Combine all the ingredients in the bowl of a slow cooker. Mix well to combine.

Cover and cook for 8 hours on low.

Alternatively heat a little oil in a large pan. Gently saute the onion, garlic and ginger for a minute or two before adding the curry powder. Cook for another minute before adding the remaining ingredients. Cover and simmer on a low heat until the lamb is cooked through and tender. Add a little more water through the cooking if needed.

Serve with rice and some steamed greens.
