Guacamole

Oh my gosh, I do love my guacamole. There is something so wonderful to sitting down with a bowl of this green goodness and scooping away. It’s the perfect snack – ready in a few minutes and full of healthiness. I love that it is chunky and textured – the tomato and coriander give it that extra boost. And the zing of the lime juice and Tabasco – what more could you want! Eat it with corn chips or carrot sticks and it will keep you satisfied for ages.

And guacamole is so versatile too. We know it works as a snack – soooo delicious! Pop a big bowl of it out as part of a grazing table when guests are visiting. It’s essential with tacos, nachos or a big bowl of chilli con carne. Or have it with bacon and  eggs on toast for breakfast. Yummy all round I say!

Guacamole

Ingredients

2 ripe avocados
Coriander – a small handful
Tomatoes – about 1 medium or 5 mini roma tomatoes
Tobasco
Lime juice
Salt

Halve the avocados, remove the seed and scoop the flesh out of the skin into a bowl. Roughly mash the avocado – you want it to still have some texture and lumpy bits.

Roughly chop the tomatoes and coriander and add to the avocado. Feel free to add more or less of either of these ingredients if you like! I will usually remove the seeds from the tomato too if using a whole tomato put leave them in if using smaller ones.

Add in a pinch of salt, Tobasco to taste and a good squeeze of lime juice. Stir well and taste. Adjust the seasoning with more salt, lime juice or Tabasco as required.
