Healthy Taco Bowl

I’ve been on a bit of a heath kick these past few week so have found myself eating clean – think lots of veggies, salad and lean meats. To keep my food interesting I have been playing around with some old favourites to see how I could enjoy comfortable flavours but still have a super healthy meal. This Taco Bowl was one such result.

Now tacos in my world are an absolute favourite and have been since early childhood. I pretty much eat them the same every time, and have been doing so for as long as I can remember. So to fiddle them was a big thing!

Thankfully the end result was delicious and one that I will do again. Yes my original taco is hard to beat, but this makes for a pretty good substitute when you are feeling the need for something a bit lighter. And whilst I had no cheese on mine this time around, I suspect there will be a handful in there somewhere most times I make this!

I haven’t added quantities for the salad ingredients as it really is a personal preference but I have put down what I included in my bowl. Enjoy!

Healthy Taco Bowl

Ingredients

500g lean beef mince
1 pkt taco seasoning
1 red onion, thinly sliced
1 zucchini, grated
Carrots, grated
1 small tin corn kernals
Baby cos lettuce, shredded
Red cabbage, finely shredded
Red capsicum, thinly sliced
Baby tomatoes, quartered
Avocado
Coriander
Limes
Tabasco, to taste

Instructions

Heat a large a frying pan and brown the mince, stirring often to break up the mince. Add in half the onion, the zucchini and about one carrot and cook for a few minutes. Add in the taco seasoning and about 1/2 C water and simmer until the mince is cooked and the sauce has reduced to your desired consistency. Add in the tin of corn at this stage.

For the avocado, scoop the flesh into a bowl and mash well. Season with a little sat and pepper and a few drops of tabasco if you want a spicy kick. Add in the juice of a lime and mix well. Set aside.

To assemble, layer your salad ingredients into a shallow bowl in the quantities you wish. I used lettuce. red cabbage. raw grated carrot, red capsicum and tomatoes, but you can add or subtract any vegetables you wish here. It is best to make one bowl per person as well.

Divide the mince and vegetable taco mix over the salad bowls. And top each with a serve of avocado. Top with fresh coriander and dress with an extra squeeze of lime juice.

Cheese, sour cream, kidney beans, taco sauce, cornchips or rice could all be added into the salad bowls if desired.
