Bacon Tomato and Kale Pasta

Who loves a super fast, healthy, one pot dinner? I certainly do! And this Bacon Tomato and Kale Pasta recipe is all of that! On the table in 15 minutes it is the perfect midweek pasta dish. It’s packed with goodness from the kale and tomatoes as well as being full of flavour and texture. For me, it’s a feel good dish to eat!

The original inspiration for the dish came from my vegetable garden.  Both the kale and tomatoes were in oversupply and ready for harvesting so I gathered an armful of each. I was feeling like pasta, something quick and easy and relatively healthy. Looking in the fridge I had not much more than a few rashers of bacon but that was all that was needed. Add in a lemon and some pine nuts and voila – the dish was born! And delicious it was!

Bacon Tomato and Kale Pasta

Ingredients

2 serves of pasta of your choice – I used Casarecce
4 rashers of bacon
2 cloves of garlic
1 bunch of Tuscan kale (or spinach)
1 lemon
1 punnet baby roma tomatoes
Handful of pine nuts
Parmesan to serve

Instructions

Bring a large pot of water to the boil then cook the pasta as per the instructions on the packet.

While the pasta is cooking, chop the bacon into a large dice and cook over a medium heat. Crush the garlic cloves with the back of a knife and add to the pan with the bacon.

Finely shred the kale and quarter the tomatoes.

When the pasta has three minutes left of cooking, add the pine nuts to the bacon pan to allow them to toast.

When the pasta has one minute remaining, add the kale or spinach to the pan along with the juice of the lemon. Cover and reduce the heat.

Drain the pasta when cooked, reserving a couple of tablespoons of the cooking water. Toss the pasta with the bacon and kale mixture, adding the tomatoes at the same time. If needed, add the cooking liquid to bind everything together.

Divide between two bowls and serve with a good grind of pepper and Parmesan cheese.
