Scallops with a Rocket Apple and Bacon Salad

For those that have been checking out my recipes for a while, you have probably worked out that I love scallops and bacon. And here is another recipe that features both – Scallops with a rocket apple and bacon salad. It’s soooo simple to make and amazingly delicious. It really has  a bit of everything. The scallops are the hero – creamy and tasting of the sea, and so delicate to eat. The apple adds sweetness and crunch, the bacon gives savouriness and another layer of texture. The rocket gives freshness with a peppery hit. And the dressing – it’s zippy and zingy and gives a really nice tang that brings the whole dish together. It’s just amazing. To me, it’s one of those dishes that you want to keep going and going, it’s always a shame when you get to the end! Definitely worth trying next time you feel like making a light scallop dish.

Scallops with a Rocket, Apple and Bacon salad

Ingredients

2 handfuls of baby rocket
½ small pink lady or granny smith apple, thinly sliced and then cut into mini matchsticks
About a dozen mint leaves, finely sliced
1 rasher of bacon, cut into thin batons
1 tablespoon Sherry vinegar
1 tablespoon olive oil, plus a little extra for cooking
A splash of soy sauce
A pinch of salt
Scallops – about 200g (or as many as you would like to eat!)
Squeeze of lemon juice

Instructions

To prepare the salad mix the vinegar, soy, olive oil, mint and salt in the bottom of a medium bowl and mix to combine. Top with the rocket leaves and apple and set aside until plating.

Heat a large frying pan and add the bacon. Cook until golden and crispy then remove from the pan.

Place the frying pan back on the heat until very hot. Add a little olive oil and the scallops then cook for around one minute per side. The scallops should be just cooked and slightly translucent in the middle. Squeeze over a touch of lemon juice and remove from the heat.

To serve, toss the apple and rocket salad and divide between two plates. Dish the scallops up with the salad then top with the bacon, sharing between the two plates.
