Easy Lemon Curd Tartlets

These Easy Lemon Curd Tartlets make for the perfect entertaining dessert. They are quick and easy to make yet taste decadent and delicious. And the fact that they can be made entirely from store bought ingredients makes them even more appealing! No one would ever know they took less than ten minutes to put together.

I will generally have the tart shells in my pantry and will always have jam and curd in my fridge. This makes it very easy to pull a batch together if last minute guests arrive for morning or afternoon tea. I tend to use my easy lemon curd when making these but there is no reason you can’t use a store bought version.  You can also make the tarts without the cream and the raspberries on top if you don’t have them on hand – it will still be delicious!

Easy Lemon Curd Tartlets

Ingredients

Store bought mini tart shells
Raspberry jam
Lemon curd
Crème fraiche or dollop cream
Vanilla bean paste
Fresh raspberries

Instructions

Place your store bought pastry tart shells onto a serving plate. Place a small amount of raspberry jam in the bottom of each tart shell – about 1/2 teaspoon.

Place a spoonful of the lemon curd on top of the jam to fill the tart shells.

In a small bowl, mix a couple of spoons of crème fraiche or dollop cream with a squeeze of vanilla bean paste and mix well. Place a small amount on top of the curd in the tarts. Top with a fresh raspberry and serve.
