Caramel Anzac Blondie Slice

Now I wish I could take credit for this delicious creation but I can’t. I discovered it a few years ago when I was looking for a slice to make to take to mothers group and I stumbled across it on the Meg Made blog. I fell in love instantly and have made this Caramel Anzac Blondie Slice many times since!

It’s one of those slices that is a hit no matter when you make it. I love that is combines two perfectly good individual flavours of Anzac biscuits and salted caramel blondie into one delicious flavour bomb. It is a bit more time consuming to make than a simple slice bit t really is worth the effort. The end result is super sweet and decadent but oh so delicious! So give this caramel Anzac blondie slice a go!

Caramel Anzac Blondie Slice

Ingredients

2 tablespoons Golden Syrup
475g unsalted butter
2 cups rolled oats
1 1/2 cups coconut
1 1/2 cups sugar
4 cups plain flour
3 teaspoons bicarb
4 tablespoons boiling water
2 cups packed brown sugar
2 eggs, lightly beaten
2 teaspoons vanilla
2 teaspoons baking powder
1/2 teaspoon salt (plus extra to sprinkle on top)

Instructions

Preheat an oven to 150 degrees and line a 24cm x 34cm slice tray with baking paper.

Combine the golden syrup and 225g butter in a large saucepan and gently heat until the butter is melted.

Whilst the butter is melting, add 2 cups of plain flour, the rolled outs, coconut and sugar to a large bowl and stir to combine.

Mix the bicarb in the boiling water then quickly add to the melted butter mix. It will foam up immediately which is what you want to see.

Add the butter mixture to the dry ingredients and mix well. Tip the mixture into the prepared baking tray and press into the edges to cover the base.

Bake in the oven for around 15 minutes, until the surface is just starting to turn golden. Remove and set aside while preparing the topping.

Increase the oven temperature to 170 degrees.

Melt the remining 250g of butter in the microwave (do this step slowly so as not to overheat the butter). Place the brown sugar into a large mixing bowl then pour over the melted butter. Mix well to combine.

Add the eggs and vanilla to the butter mixture and stir well. Sift in the remaining 2 cups of plain flour, baking powder and salt. Stir well.

Bake in the oven for around 30 minutes, until the top is golden and just beginning to crack. Remove from the oven and set aside to cool.

Slice into large pieces to serve. Store in an airtight container in the fridge for a few days.
