Super Fudgy Brownies

Everyone loves a good brownie. That’s one food truth I’m completely certain of! Brownies are such a delightful sweet treat that comes in so many varietals that there is always one that will tickle your fancy. Will they be a simple single flavour or one filled with other goodies? Nuts or fruits? Or both? Fudgy or cakey texture? Any toppings? Is it even a brownie if it’s not chocolate? I’m not sure!!  So many options – the brownie world really is endless!!

These delicious fudgy chocolate brownies are my personal favourite. I love them as they are rich and decadent but not too sweet, and the fudgy interior really makes them amazing. They are deceptively simple and fast to cook making them the perfect sweet treat. And the recipe can be easily doubled when baking for a crowd.

This brownie recipe originally came from one of my sisters who had sourced it from an American friend many years ago. Since then it is that has been passed around the family many times!

These days brownies are made with my small kitchen helpers who getting their hands dirty – measuring, stirring and of course licking the bowl at the end! I keep mine at room temperature in an airtight container and they will last for close to a week. That is if the family doesn’t eat them first!!

Super Fudgy Brownie

Ingredients

1C butter
1C cocoa
2C castor sugar
4 eggs
2t vanilla paste
1C plain flour
1t baking powder
1t salt plus an extra pinch for sprinkling on top

Instructions

Heat oven to 175 and line a 13" x 9" baking tray (33 x 22cm).

Melt the butter in a large saucepan then stir in the cocoa.

Beat the sugar, eggs and vanilla into the cocoa and butter mixture.

Stir in the sifted dry ingredients.

Pour the brownie mix into the prepared baking pan and sprinkle over a little more salt, preferably salt flakes. Bake for 25 minutes or until a knife comes out clean.

Allow the brownies to cool completely in the pan before turning out and cutting to size.
