Simple Bolognaise
This simple bolognaise is a complete winner in my house. It’s delicious, quick and easy to make and is packed full of hidden vegetables. Just what you want when cooking for fussy kids! It’s my go-go when I want a bowl of spaghetti but have run out of my usual long slow sauce that I cook in bulk and keep in the freezer.
Of course it doesn’t have the depth of flavour that comes with a 4 hour cook. That’s ok! This is a sauce that’s beauty is in its simplicity. It’s perfect weeknight cooking. So if you want a quick and tasty sauce that everyone will eat, you can’t go wrong with my simple bolognaise.
Bonus benefits – you can freeze any leftovers for another night!
Ingredients
500g pork mince
500g veal mince
2 carrots
1 zucchini
1 onion
Mushrooms – about 1 small punnet
1/2 - 1 teaspoon oil of your choice
1 jar passata
1-2 cups chicken stock
Salt & pepper
Instructions

Peel and roughly chop the vegetables and place into a food processor. Blitz to finely chop the vegetables. If you don’t have a food processor, grate or finely chop the vegetables.

Heat the oil in a large pan and add the vegetables. Cook for around 5 minutes, stirring often, until the vegetables have softened. Remove from the pan and set aside in a large bowl.

Return the pan to the stove. Add half the mince and cook for around 5 minutes to get some colour on the mince. Remove and add to the bowl with the vegetables. Repeat with the remaining mince, retuning the vegetables and mince to the pan when the second batch of mince is cooked.

Add the passata and enough chicken stock to get the desired sauce consistency and season with salt and pepper to taste. Bring to a simmer and cook for around 15 minutes.

Serve over pasta, zoodles or rice.
