Scallops with Apple, Bacon & Coriander

Ingredients

8-12 scallops depending on size
1 rasher of bacon, sliced into thin batons
1 granny smith apple, skin on, julienned
1/2 cup coriander leaves
1-2 tablespoons lime juice
1-2 tablespoons sherry vinegar
1 tablespoon macadamia oil

Instructions

Place scallops on paper towel to allow any excess moisture to be removed.

Cook bacon until golden in a large frying pan. Place in a bowl with the apple and coriander leaves. Combine the lime juice, vinegar and macadamia oil and dress the salad. Set aside.

Reheat the bacon frying pan until very hot. Add a glug of macadamia oil to the pan along with the scallops. Sear the scallops until just cooked - no more than 30 seconds on each side. They should be golden brown on the outside but still be translucent in the centre.

To serve divide the salad and scallops between 2 plates.
