Smoked Salmon Omelette

Does anyone else eat breakfast for dinner? It’s one of my favourite things to eat! Especially when I’m just cooking for me and want something fast and delicious. Yes, your classic bacon and eggs are always amazing but this Smoked Salmon Omelette has to be my favourite breakfast as dinner dish. It’s quick and easy – ready in well under 10 minutes. It’s full of flavour, super savoury and with the addition of the tomato rocket salad, becomes a nicely balanced meal. I love it! In fact,  the last time hubby was away for a week I had it twice….yes it is that good!

Smoked Salmon Omelette

Ingredients

3 eggs
75g smoked salmon
1-2 teaspoons capers, drained and rinsed - optional
Fetta cheese to taste – optional
Rocket and tomato salad to serve

Instructions

Crack the eggs into a small bowl and whisk together lightly.

Heat a medium non stick frying pan until quite hot. Add the eggs and turn the heat down to a gentle heat to cook the omelette.

Cook the omelette for about 3 minutes, using a spatula to run under the edges of the omelette to stop them from sticking.

When the egg is getting close to set, but still a little loose, place the salmon, capers and fetta over one half of the omelette. Using the spatula, lift up and fold the other half of the egg over to form the omelette.

Slide the omelette out of the pan gently using the spatula to help guide it out.

Serve with a quick rocket and tomato salad dressing with sherry vinegar.
