Salmon Rocket and Lemon Pasta

This salmon rocket and lemon pasta is the ultimate in quick and easy weeknight dinners. On the table in under 15 minutes and super tasty, it’s a weeknight wonder in a bowl. It’s quick and ridiculously easy to make. The sauce requires no cooking, just prep the ingredients whilst  the pasta is cooking. Then it’s just a matter of mixing it all together and dinner is done!

And the flavours in the pasta are so fresh and light. The salmon gives robustness, the rocket and tomatoes the freshness and the lemon and capers give the zing. Together they create the perfect blend of flavours that are a delight to eat. It’s a perfect pasta dish when the weather is warmer and you’re not looking for a heavier sauce on your pasta. Its is also delicious as light lunch or as part of a banquet of dishes.

Salmon, Rocket and Lemon Pasta

Ingredients

2 serves of pasta of your choice. I like linguine or a long tight spiral.
1 small bag of rocket
1 piece of hot smoked salmon, about 100-150g, flaked
12 mini roma or cherry tomatoes, quartered
1 tablespoon capers, rinsed
Lemon juice
Olive oil
Splash of soy sauce
Salt and pepper

Instructions

Cook the pasta according to the instructions on the packet.

Whilst the pasta is cooking prepare the dressing. Add about 2 tablespoons of both lemon juice and olive oil to a bowl along with a splash of soy sauce and a pinch of salt and pepper. Mix the dressing well to emulsify the ingredients together.

When the pasta is cooked, drain, reserving a tablespoon or two of the cooking liquid. Return the pastas to the saucepan and add in the tomatoes, salmon, rocket, capers and the dressing. Toss well to combine, adding a little of the cooking liquid if needed.

Divide the pasta between two bowls and eat immediately. Can be served both with or without Parmesan cheese.
