Easy Yoghurt Bread

I’ve just got myself two new ovens and I’m in heaven. There’s so much I want to cook in them and I’m finding it’s bringing out the baker in me. And when feeling inspired by baking, bread is close to the top of the things I want to try cooking! This easy yoghurt bread was inspired by a cooking demonstration I did with the new ovens and I came home and just had to give it a try.

It is one of those fantastic recipes. Quick and easy to get into the oven and made from ingredients I almost always have in the house. What more could you ask for. There’s no waiting for it to prove, no fiddling around with yeast and I’ve found it to be quite a forgiving dough to work with.  And the yoghurt gives the bread a lovely tang which gives it a delicious difference to classic breads.

My girls love it too. Either warm or toasted then smeared with creamed honey it makes for a yummy snack or post dinner treat for them.

You can easily add to the basic dough to incorporate additional flavours. Semi-dried tomatoes, olives, herbs or spices all can be added to the dough. And who doesn’t love a good savoury loaf!

Easy Yoghurt Bread

Ingredients

2 ½ cups self raising flour
2 to 2 ½ cups Greek yoghurt
1 teaspoon salt flakes

Instructions

Preheat the oven to 200 degrees on a fan forced setting. Line a baking tray with baking paper and set aside.

Sift the flour into a large bowl and add the salt. Mix to combine,

Add in 2 cups of yoghurt and mix to form a dough. I use a stiff spatula or wooden spoon to star and the move onto mixing with my hands to bring it all together. If the dough is not coming together you can add a little more yoghurt but only add a spoonful at a time. You want to end up with a soft and slightly moist dough. Be careful not to overwork the dough.

Form the dough into a loaf shape and place on the prepared baking tray. You can go with any shape – the beauty is this is a rustic free form loaf.

Place the tray into the oven and cook for around 45 minutes. Depending on the shape of you loaf you may need a little more or less cooking time. When cooked, the outside with be golden and crispy and the inside will be soft and still a little moist.

Serve warm with butter or honey. It is also delicious toasted.
