Apple Oat Yoghurt Muffins

These apple oat yoghurt muffins are the perfect kids snack. Packed full of goodness with oats and apple and with minimal sugar they are deceptively healthy. Kids love them – they feel like they are eating a treat but you know it is not too unhealthy. Super simple to make as well, they are an ideal treat for the kids to help make as well.

And they freeze really well. I tend to freeze half the batch when I make them so that I can pop them in lunchboxes or grab a couple on those days when you need something quick and easy when out and about.

Apple Oat Yoghurt Muffins

Ingredients

1 cup self raising flour
½ teaspoon baking powder
1 cup rolled oats
1 tsp ground cinnamon
1 egg
1 cup Greek yoghurt
1/2 cup pureed apple
2 tablespoons maple syrup
1 teaspoon vanilla extract
1 medium apple – peeled and grated. I use pink lady or granny smith apples.

Instructions

Preheat oven to 180 degrees. Prepare your muffin tin – around 36 mini muffins or 12 standard sized muffins. I like line the pan with paper cases as it just makes it easier but you can grease the pan if you prefer.

Sift the flour, baking powder and cinnamon in a bowl. Add the cinnamon and stir to combine.

Add the egg, yoghurt, maple syrup vanilla and apple (both grated and pureed) to another bowl and mix well to combine.

Add the wet ingredients to the dry ingredients and stir until just combined.

Spoon the mixture in to the prepared muffin tray, dividing the mixture evenly. Bake in the oven for around 22 minutes (mini muffins) or 25-30 minutes (standard sized), checking that they are cooked through.

Remove from the oven and allow to cool for about ten minutes in the tray. Then remove and cool completely on a wire rack. Store in an airtight container for about five days.
