Ultimate Mashed Potato
A good mashed potato is one of the ultimate comfort foods. It’s warm and tasty, creamy and smooth and the perfect accompaniment to so many dishes. For something that really is a simple dish, there are many different ways to make it too. Lots of butter and cream to make it super rich, or just a little butter and milk for a quick and simple version. Or you could try my version that replaces the milk or cream with sour cream and adds in a good handful of Parmesan to pack in a flavour punch. Its delicious. And quick to make which is always a winner.
Interestingly, when I first met my husband, mashed potato caused many a discussion in the kitchen. It is one of his favourite foods and he claimed he made the best mash out there. Now it was good, but it was just another basic mash recipe. And of course I thought that my mash, this recipe to be exact, was the best mash out there. It took a few years but he will now readily admit that mine is superior! It’s also the only mash that my mother will eat and she is a staunch mash-hater if you ask!
Anyways, give this recipe a try if you are a fan of the mashed potato. The creaminess is divine and the slight tang from the sour cream makes it that little bit different to usual.
