Tzatziki

Tzatziki

Tzatziki is a delicious dip that is utilised in so many recipes. It is amazing on its own eaten with veggie sticks, pita bread or crackers. Or it can provide a lovely cooling balance to a rich roast lamb. And it provides a delicious sauce on a wrap with just about any filling. Plus it makes the perfect accompaniment to my Lamb & Eggplant Meatballs. Refreshing, garlicky, full of lemon and herbs, you can’t go wrong with this version!

Tzatziki

Ingredients

1 Lebanese cucumber
1 Cup greek or natural yoghurt
1 large clove of garlic
1 handful of mint
1 lemon, zest and juice
salt
olive oil

Instructions

Finely grate the cucumber and gently squeeze out the excess moisture.

Place the cucumber in a bowl with the yoghurt. Zest the garlic and add to the bowl along with the chopped mint and lemon zest. Add in a pinch of salt, the juice of half a lemon and a drizzle of olive oil and stir well to combine.

Taste and add more lemon juice or salt if required. Serve.
