Roast Cauliflower & Fennel Soup

I can always tell when the weather is cooling down as I start making soups almost weekly. Barbeques and salads make way for bowls of hearty soup and I love experimenting with new flavour combinations. This week I was inspired by some cauliflower and fennel in the fridge. So I thought I would try an oven roast cauliflower and fennel soup. It was seriously delicious!

What I loved about the soup was how simple it was. Throw all the ingredients in a pan and into the oven it goes to roast and develop flavour. You will know when the first stage is done from the smell wafting from the kitchen. Toasty and roasted, it will be teasing you with deliciousness. Add in the stock and let it all roast some more. Now any good stock will do here. I used the remaining stock from last week’s pea and ham soup but a good quality chicken or vegetable stock would work just as well.

I loved how the addition of lemon into the soup elevated it from a simple cauliflower soup to one that packed a real flavour punch. Combined with the toastiness from roasting the vegetables and the sing of garlic across the palate , this soup is a winner.

Ingredients

1 large fennel bulb
1/2 cauliflower
1 head of garlic, peeled
1 lemon, juice and zest
Salt & pepper
Olive oil
1-1.5 litres stock, ham, chicken or vegetable

Instructions

Preheat oven to 180 degrees.

Roughly chop the fennel and cauliflower into medium prices and place into a large baking tray along with the peeled garlic. Drizzle over 1-2 tablespoons of olive oil then add a pinch of salt and the lemon zest. Toss well to combine.

Place into the heated oven and cook for an hour, giving the pan a bit of a shake halfway through. The vegetables should be smelling lovely and toasty and have a rich golden colour.

Add the stock to the pan and return to the oven for another half an hour.

Remove from the oven and blend in batches until smooth. Add in the juice of half a lemon and check for seasoning. A little more salt or lemon juice may be needed – adjust to your liking.

Serve with fresh crusty bread or toast and plenty of pepper. You could also top with a handful of crispy bacon or fried ham or serve with a toasted cheese sandwich.
