Gnocchi Rocket Pesto

Gnocchi with Pesto, Bacon and Tomatoes

This pesto gnocchi dish is a recurring favourite for Friday or Sunday night dinner in our house. For me it really is a dish made from fridge and pantry staples. I always have a packet or two of gnocchi in the cupboard, bacon in the fridge and tomatoes on the bench. And more often than not I will have the ingredients for a pesto in the fridge or have a batch in the fridge or freezer. Worst case, I tend to keep a jar of pesto in the cupboard as well, for those emergency meals!

The dish is super quick and easy to make – everything is ready in the time the water takes to come to the boil then it’s minutes to cook the gnocchi. I t is also amazingly tasty and with the colours popping off the plate it is fun to eat! In my opinion this beats a takeaway hands down every time!

 

In this version I have used my rocket pesto but you can substitute for an flavoured pesto you have – be it a traditional basil or a sun dried tomato variety. It really is up to you!

Gnocchi Rocket Pesto

Ingredients

I packet gnocchi
4 rashers bacon, chopped
3-4 tablespoons of pesto
12 cherry tomatoes, quartered
Parmesan, to serve

Instructions

Place a large pot of water on the stove and bring to the boil. While the water is coming to the boil, cook the bacon until just crispy.

Cook the gnocchi as per the packet instructions.

Place the pesto into a large bowl and add the gnocchi as it has cooked, along with a little cooking water – no more than a tablespoon or two. Mix well.

To serve, divide the pesto gnocchi between bowls. Top each bowl with some cooked bacon and chopped tomato then add Parmesan to taste.
