French Dip Sandwiches

These French Dip Sandwiches take me straight back to ski holidays in America. I first discovered them in Colorado in 2006 and have eaten way too many of them since! Soooo good! And this version is the closest I have got to the real thing over there. With just one bite, I’m sitting in a pub at the bottom of the mountain after a solid day on the snow. I just love when food can evoke such a strong memory!

They are so simple to make too. It takes about 5 minutes to pop everything in the slowcooker in the morning, then it’s set and forget for eight hours or more. What more could you want! And then it’s as simple as loading up the bread with cheese and a generous serve of meat along with  a side of the broth and that is dinner done. Easy and delicious!

Make sure you have plenty of broth to go along with it too – the dipping is the best! You know you’ve enjoyed the meal when you have it dripping down your arm!

French Dip Sandwiches

Ingredients

1 topside beef roast – mine was about 1.3kg
Salt and pepper to season
Olive oil
2 onions, peeled and sliced
3 cloves of garlic, crushed
1 packet French onion soup mix
1 cup beef stock
1 tablespoon soy sauce
2 tablespoons Worcestershire sauce
1 bottle of beer (375ml)
Swiss cheese
Crusty bread rolls or baguette, to serve

Instructions

Season the beef roast with a generous amount of pepper and a little salt on all sides.

Get a frypan searing hot and seal the beef on all sides in a little olive oil – about a minute on each side. You want to have a good crust on each side.

Place the beef into a slow cooker along with all the remaining ingredients except the beer, cheese and bread. Deglaze the frypan with about half the beer then add the liquid, remaining beer and about 1 cup of water to the slowcooker. Stir well.

Cook on the low heat setting for around 8 hours. If you are home, turn the beef in the broth every few hours.

To serve remove the beef from the slowcooker and slice thinly (if you can) or shred. Strain the broth into a jug, discarding the solids. Place a few slices of swiss cheese onto your bread and top with a generous amount of beef. Serve with a small bowl or cup of the broth on the side to dip the sandwich into while eating.

You can also add fried mushrooms or the onions from the broth to the sandwich if you like!
