Chickpea Apple and Peanut Butter Cookies

Every now and then I am motivated to make some home made snacks for my girls. Generally, they both eat really well. But I sometimes feel the need to balance out the convenience of packaged food with something I have made. We all know it can be tricky feeding small people when out and about, especially something healthy.  Having some go to recipes that I know they will (usually!) eat is a godsend.  These chickpea apple and peanut butter cookies are generally a hit, especially with my oldest. I’ve found they are perfect to have in the car to keep the hangry monster at bay on the drive home from daycare!

The recipe is inspired by the chickpea cookies on the One Handed Cooks website and I have fiddled a bit with the ingredients over the years. They are the type of cookie that you can be flexible with. No dried fruit is ok or try something other than sultanas if you prefer. Less sugar can be done or add in a handful of choc chips if you want something more indulgent.

When baking them, you want a slightly gooey cookie too – they will still be slightly soft when you take them out. Keep an eye on them whilst cooking – if you make small cookies they will be done much quicker than the larger ones I have made.

Ingredients

400g tin chick peas, drained
2 heaped dessert spoons of peanut butter
2 heaped dessert spoons of brown sugar
1 teaspoon vanilla extract
1 teaspoon baking powder
1 small red apple, finely grated
½ cup oats
1 tablespoon chia seeds
A good handful of sultanas or other dried fruit (optional)

Instructions

Preheat oven to 180 degrees. Place chick peas, peanut butter, apple, sugar, vanilla and baking in a food processor and whiz until smooth.

Place oats, sultanas and chia seeds in a bowl then add in the chick pea mixture. Stir well to combine.

Place spoonfuls of the mixture onto a baking paper lined baking tray then flatten slightly. I got 15 large cookies from the mixture.

Bake for around 15-20 minutes. Remove from the oven and place the cookies on a wire rack to cool.

Keep in an airtight container in the fridge for a week – if they last that long!
