Banana Date Loaf

If you’ve been reading my blog for a while, you will have noticed that I’m a fan of baking banana bread. There’s already my Banana, Date & Pepita Bread as well as my Banana, Zucchini & Date Loaf. Today I’m sharing my basic Banana Date Loaf recipe. It’s a classic!

My most recent bake of this loaf was labelled the best ever by hubby and that is a big call from him. So I thought it was time to share the recipe for my basic loaf.

Like most banana breads, it is a quick and easy recipe that doesn’t require a lot of ingredients. For me, the recent tweaks of adding an extra over ripe banana, some vanilla and a good pinch of salt is what elevated the loaf to exceptional. These changes were quickly incorporated to being standard and the loaf is on high rotation in my kitchen at the moment. I can’t bake it fast enough to keep up with demand!

Banana Date Loaf

Ingredients

200g dates, chopped
250ml water
125g brown sugar
Pinch of salt
3 ripe bananas
1 teaspoon vanilla
2 C self raising flour
1/2 teaspoon bicarb

Instructions

Preheat oven to 180 degrees. Line a 24 x 14 cm loaf tin with baking paper

Combine the dates, sugar and water in a saucepan. Place over a medium heat and bring to a gentle boil and simmer for a minute or two. Add the pinch of salt then set aside.

Place the banana and vanilla into a bowl. Mash the bananas well, mixing the vanilla in as you go.

Sift the flour and bicarb into the bowl with the bananas and add the warm date mixture. Mix well to combine.

Spoon the mixture into the prepared loaf tin and smooth the surface. Bake in the preheated oven until golden and cooked through, around 40 minutes.

Allow to cool for 5 minutes in the tin before turning onto a wire cake rack to cool completely.
