Bacon Cheese Ball

This Bacon Cheese Ball is a new discovery for me. And boy is it a good one! I found this recipe for a Bacon Ranch Cheese Ball recently and I knew I had to make it.   The recipe needed tweaking given we can’t get ranch seasoning mix or pepper jack cheese all that readily in Australia. But the end result was amazing! It’s definitely going to become a new favourite!

With cheese and bacon two of my favourite things it was always going to be a winner. But the combination was even better than expected. Crunchy savoury bacon, sharp cheddar cheese, a  bit of zing from the spring onions – all brought together in a creamy cheesy concoction. And then the added crunch and earthiness from the walnuts in the coating – fantastic! I can’t wait to have another excuse to make this again!

Bacon Cheese Ball

Ingredients

6 rashers bacon, finely diced
250 g cream cheese
3/4 cup sour cream
1 packet spring vegetable soup mix
100g finely grated pepper flavoured cheese (or other cheese like gouda if you can't get a pepper cheese)
200g finely grated tasty cheese
4 spring onions / shallots, finely chopped
100g finely chopped walnuts
Corn chips, crackers, vegetable sticks to serve

Instructions

Place the bacon in a large frying pan and place over a medium heat. Cook, stirring often until the bacon is golden and crispy. Drain on paper towel then divide into two equal portions. Set aside to cool.

Place one half of the bacon, the cream cheese, sour cream, spring vegetable soup mix, pepper cheese and all but a good handful of the grated tasty cheese and half of the spring onions into a large bowl. Mix well to combine all ingredients.

Spread a large piece of cling wrap on the bench. Place the cheese mixture onto the centre of the cling wrap and cover tightly, forming the cheese into a ball shape. Place into the fridge and cool for at least two hours or until firm.

To make the coating for the cheese, place the remaining bacon, cheese, spring onions and walnuts into a bowl and mix well. I generally make this when I make the cheese ball and keep it in the fridge while the cheese ball is firming up.

Just before serving remove the cheese ball and bowl coating from the fridge. Spread the coating out on a chopping board or baking paper. Unwrap the cheese then roll in the coating, pressing gently to get the mixture to stick. You want to try for an even coverage all over if possible. This is a messy job!!

Serve on a board with carrot and celery sticks, crackers and corn chips.
