Apple Berry Oat Muffins

Seems it’s muffin time again in my house! We’ve been having a run with banana bread of late so my muffin game has been pretty quiet. But an oversupply of apples recently had me thinking about apple muffins. So I decided it was time to play with some new muffin flavours. These Apple Berry Oat Muffins are just one of the results and they are seriously delicious!

The stewed apple keeps them delightfully moist . And with chunks of apple and a lovely tart berry flavour they are are a sweet treat without being overly sweet. They are perfectly balanced flavours in my opinion. I can eat them anytime – morning tea,  afternoon tea or just because! Or pop one in the kids lunchbox.

They’re apple berry oat muffins are definitely an all round family muffin too with my husband and I inhaling just as many as the girls do.

Apple Berry Oat Muffins

Ingredients

1 1/2 cups stewed apples
1/2 cup milk
1 egg
1 cup frozen raspberries
1 teaspoon vanilla
1/2 cup olive oil
Pinch salt
3 tablespoons brown sugar
Zest of 1 lemon
1 large apple, peeled and diced
1 cup oats
1 cup wholemeal SR flour
1 cup SR flour

Instructions

Preheat oven to 180 degrees. Grease or line a 12 muffin tray.

Combine the stewed apple, milk, egg, raspberries, vanilla and olive oil in a blender and process until smooth.

Place the flours, salt, brown sugar, oats, lemon zest and diced apple into a bowl. Stir to combine. Pour over the wet mixture and mix until just combined.

Spoon the mixture into the prepared muffin tray. Cook for 25-30 minutes or until cooked through and golden on top.

Remove from the oven and cool for 5 minutes in the tray then cool completely on a wire rack. Best kept in an airtight container in the fridge.
