Slow Cooker Ratatouille Chicken
Gosh I’m loving my slow cooker at the moment. There’s something so rewarding about getting dinner organised early in the day. Then come dinnertime something delicious is ready to eat. It’s a wonderful way to cook on a busy day, be it a stew, soup or curry. And slow cooker food is amazing in the cooler months of the year when comfort food is an essential. This slow cooker Ratatouille Chicken is a fantastic healthy recipe that is perfect for the whole family to enjoy.
Ingredients
2 chicken breasts, about 600g
1 red capsicum
1 eggplant
6 roma tomatoes
1 red onion
1 stick celery
6 cloves of garlic
Handful of basil leaves and a few sprigs of thyme
1 tablespoon red wine or balsamic vinegar
Instructions

Peel and roughly chop all the vegetables – you want a 2-3 cm dice. Cut the chicken into similar sized pieces.

Place half the vegetables into a slow cooker then top with the chicken. Season with salt and pepper then add the herbs and remaining vegetables.

Cook on the low setting for 8 hours or the high setting for 5 hours. Before serving, stir through the vinegar and taste for seasoning. Adding more salt, pepper or vinegar to taste.

Serve over rice, potatoes or pasta.
