Lois Shortbread

Lois’s Shortbread

As you may have gathered, I don’t really have much of a sweet tooth. It rarely occurs to me to cook something sweet. It just doesn’t enter my never ending food thought process!  My husband on the other hand, loves his sweet treats – both eating and cooking. Brownies, cakes, tarts, ice cream, sweet biscuits  – these are all things he loves. And one of his most favourites is shortbread.

Thankfully his mum, my mother in law, makes an amazing shortbread. Whenever we are headed interstate for a visit, he makes sure to put in a request for a batch. Same goes when they are visiting us – more often than not a box of her homemade shortbread appears too. He has recently worked out he needs to hide his shortbread stash too – both girls have discovered how tasty it is and would happily help him eat it!

I have been trusted with the recipe from Lois now so can make it at home….when I think of it! And it is delicious. Light and slightly crumbly, full of the perfect buttery flavour they are a yummy biscuit morsel to have with a cup of tea. It’s hard to stop at just one…or even two!

Lois Shortbread

Ingredients

310g butter, room temperature
170g castor sugar
440g plain flour
60g almond meal
Glace cherries, for decorating

Instructions

Preheat oven to 180 degrees.

Cream butter & sugar until well combined and pale in colour.

Work in the dry ingredients until the mixture is smooth.

Turn the mixture onto the bench and form into a long roll. Slice into rounds, just under 1cm thick and place onto a baking paper lined tray.

Decorate each slice with a piece of glace cherry or prick with a fork.

Bake in the oven for 20 - 25 minutes.
