Bliss Balls

Kids Bliss Balls

These kids bliss balls are a perfect sweet treat for a fussy child. Full of natural goodness they taste like a treat but are in fact, quite healthy for them. They are a fantastic addition to a lunchbox or as a post school or daycare snack. Even one on the plate with dinner can be a good idea some days.

When I make them I tend to do a couple of different flavours at a time. Here I have the recipes for a date and mixed nut ball and an apricot coconut ball. Both are delicious and appeal to both the big and little people in the house!

Once again I too inspiration from One Handed Cooks when I first started playing with these kids bliss balls.

Bliss Balls

Ingredients

2 cups oats
1 cup dried apricots
2-3 tablespoons honey
1 apple, grated
1 cup desiccated coconut
1 tablespoon chia seeds
1 cup dates
1/2 cup desiccated coconut
1-2 tablespoon tahini
pinch of salt
3/4 to 1 cup of unsalted mixed nuts. I used macadamias and cashews.
1 tablespoon honey

Instructions

For the apricot coconut balls, toast the oats in a frying pan for a couple of minutes until lightly toasted. Place your apricots into a food processor and whiz until chopped. Add in the oats, honey, apple, chia and 3/4 of teh coconut and process until smooth and well combined. Roll the mixture into bite size balls and then toss in the remaining 1/4 cup of coconut.

For the date and nut balls, lightly toast the coconut over a medium heat. Add to a food processor along with the dates, nuts, salt, tahini and honey and process until smooth and well combined. Roll the mixture into bite size balls and then toss in any remaining coconut.
