Hot Smoked Salmon, Zucchini & Bacon Linguine
Some nights just call for a quick and easy dinner. You know those days – it’s been a long day, you’re feeling tired and the thought of cooking is the last thing you want to do. This salmon pasta is perfect for these kinds of days.
It uses hot smoked salmon, bacon & zucchini – three ingredients that I would have in my fridge and cupboard more often than not. This makes it oh so easy to be throw together on those nights when you feel like the fridge is empty. Its super simple to make and comes together in the time it takes to cook the pasta. And the flavours are bright and fresh with the delicious bacon-ness and lemon at the end just bringing it all together.
Ingredients
200g linguine
2 rashers bacon, diced
1/2 red onion, thinly sliced
2 cloves of garlic, crushed
2 medium zucchini, halved and thinly sliced
150g hot smoked salmon (approx 1 fillet), flaked
juice & zest of 1 lemon
salt & pepper

Bring a large pot of water to the boil and add the pasta. Cook as per the instructions on the packet.

Whilst the pasta is cooking, heat a large frying pan and add the bacon. Cook until golden and beginning to crisp. Reduce the heat to low and add in the onion and garlic and cook gently until softened - a few minutes.

Next add in the zucchini and cook gently until just tender - this will only take a few more minutes. Add in the lemon zest and stir well.

Drain the pasta when it has cooked, reserving half a cup of the cooking water.
Add the flaked salmon and drained pasta to the zucchini bacon mix along with the pasta water and lemon juice and stir well to combine.

Season with a little salt and plenty of pepper and serve immediately.
