Healthy Mediterranean Chicken

Everyone needs a go to chicken dish. Something that is quick and easy yet full of deliciousness.  This healthy Mediterranean Chicken dish is probably mine.

There is so much going for it. It has so many of my favourite flavours in it, full of tomato, zucchini and capers. It is quick and simple to make and healthy as well. And the girls will happily eat it making it the perfect family friendly dish. The leftovers a fabulous for  lunches or to go in the freezer for another day. I will often make a double batch just to pop a meal away for another day.

It works quite well in the slow cooker too making my healthy Mediterranean chicken the perfect weeknight dish when you know you will be short on time in the evening.

Healthy Mediterranean Chicken

Ingredients

600 chicken breasts, trimmed and cut into large chunks
Small dash of avocado, macadamia or olive oil
1 large red onion, sliced
3-4 cloves garlic, crushed
Zest and juice of 1 lemon
1 teaspoon of sumac
1 teaspoon dried oregano
1 tin of tomatoes
2 medium zucchini, halved then cut into 2cm chunks
1 tin of artichokes, drained and quartered
2 tablespoons capers

Instructions

Heat a large pan and add the oil, onion and garlic and cook for a few minutes until soft and translucent.

Add in the chicken, sumac, oregano and lemon zest and cook for around 3 minutes, stirring often.

Add in the tinned tomatoes and zucchini and enough water to create a sauce consistency. Stir well, cover and simmer for 10 minutes.

Add in the lemon juice, capers and artichokes and cook for a further 5 minutes, or until the chicken is cooked through and zucchini soft.

Serve over baby spinach, zoodles, pasta or rice.
