Healthy Beef Chow Mein

Who knew there was such a thing as a Healthy Beef Chow Mein? I certainly didn’t! I think of loads of slippery noodles in a rich and slightly sweet sauce. Something a little bit naughty. But when I was asked to come up with a lighter version, I saw it as a bit of a recipe challenge. And I had some fun creating this dish, which I have to say is delicious!!

Now I know it isn’t technically a Chow Mein given there are no noodles anywhere in sight. But what are you going to do? The flavour profile however, is very similar and the cabbage does a great job of providing the texture that would traditionally come from the noodles. You get all the elements you are searching for – crunch from the vegetables, noodle like sensation from the cabbage.  All the herbs and spices are there along with the lovely sauciness that brings it all together. Serve with plenty of coriander and fresh chilli to taste you can’t go wrong. It’s a winner! And I’ll claim it as my Healthy Beef Chow Mein anytime!

And if you really need the noodle factor, stir through some egg noodles with the cabbage or serve it over rice to give it an added boost!

Healthy Beef Chow Mein

Ingredients

600g beef mince
1 red onion, thinly sliced
4 cloves garlic, crushed
Thumb sized knob of Ginger, finely grated
3 teaspoons five spice powder
2 tablespoons soy sauce
Sesame oil
100g shitake mushrooms
1-2 carrots, grated
Wombok or savoy cabbage, shredded, about 3 cups
Coriander and fresh chilli to serve

Instructions

Combine mince, garlic, ginger, soy sauce and five spice in a bowl and mix well to combine (hands work best for this).

Prepare the vegetables. Shred the cabbage, thinly slice the mushrooms and onion and grate the carrot.

Heat a wok to very hot. Add a few drops of sesame oil and the beef mixture and stir fry for a few minutes until half cooked. Add the mushrooms and continue to cook, stirring often until the mince is cooked through and the mushrooms soft.

Remove from the heat and stir through the sliced onion, grated carrot and cabbage. Divide between four bowls and top with coriander and fresh chilli (if desired)

Note: if you prefer your onion cooked, add into the mince mixture at the same time as the mushrooms to soften.
